What is A2 ghee and how is it different from regular ghee?
A2 ghee is made from the milk of Indian desi cows, which produce only the A2 beta-casein protein. Most commercial ghee comes from crossbred cattle whose milk also carries A1 protein. Ours is churned the traditional bilona way from cultured curd, never from cream or butter shortcuts.
What does "bilona method" actually mean?
Whole milk is set into curd, hand-churned to separate white butter, then the butter is slow-heated over a low flame. It takes roughly 30 litres of milk to make one litre of ghee. It is slower and costlier than machine extraction, and it is why the aroma and grain are what they are.
Is your honey raw, and why does it crystallise?
Yes. Our forest honey is never heated or filtered beyond straining out wax, so the natural enzymes and pollen stay intact. Crystallisation is a sign of raw honey, not spoilage. Stand the jar in warm water for a few minutes and it turns liquid again.
How should I store ghee, and how long does it keep?
Keep it in a cool, dry place away from direct sunlight and always use a dry spoon. Ghee does not need refrigeration and stays good for 12 months from packing. Moisture is the only real enemy.
What makes cold pressed mustard oil different?
It is pressed in a wooden kolhu at low temperature, then left unrefined and undeodorised. That keeps the deep golden colour and the sharp, pungent aroma that refined oils lose during processing.
